Wash and cut up the meat. Wash and slice tomatoes and keep them separate. Peel and slice onions finely. Grind ginger and garlic and powder gram masala if used. In a pan heat the oil. Fry onions till light brown. Add mutton, ground garlic and ginger, turmeric and gram masala if used. Stir well for a few minutes. Add chopped tomatoes and very little water. Cook till all the water evaporates. Stir till meat browns and tomatoes and onions are well mashed.  Add more water and continue to cook till meat is tender and oil comes up. Add tamarind, salt and sugar; simmer, let gravy thicken. Serve hot.
