Vellari Pachadi













Ingredients

Veg. marrow (cucumber) large yellow/ orange variety
1 (400gms)
Coconut
200gms
Green chilli

Red onions (small)

Garlic

Cumin (optional)

Mustard seeds

Curds
150ml
Salt
to taste

For tempering:


Oil
15ml
Curry leaves
1 spring
Mustard seeds
1 pinch
Small onion
1


Peel, remove seeds and cut cucumber into small cubes. Peel and slice onions and garlic. Boil together the above three ingredients with a little salt. Grind to a fine paste green chillies, coconut and cumin if used. Beat curds till smooth. Add boiled vegetables, finely crushed mustard. Check for seasonings and bring to boil. Heat oil, add sliced onions and curry leaves. When onions brown, add mustard seeds and as the seeds crackle pour over pachadi. Mix well.
