Prepare the vegetables. Grind together ginger, red chillies, coriander powder, turmeric, cumin, garlic, mustard seeds and half the onions. Slice remaining onions. Heat the fat and fry the onions till golden brown. Remove. Fry ground spices and vegetables. Add browned onions, salt and water. Cook till vegetables are tender and gravy is thickened.
