Moghlai khorma















Ingredients

For 8 – 10
Mutton
1kg
Fat
120gms
Sugar and salt
to taste 

For grinding:


Garlic
10gms
Onions
50gms
Ginger
10gms
Red chillies
6 – 10
Cinnamon
2.5 cm. (1”) piece
Cloves
5gms
Small cardamoms
3gms


Cut mutton into big pieces. Wash and drain. Apply ground spices and set aside. Heat 100gms of fat. Add mutton, sugar and salt. Cover and cook over a slow fire till all the water that comes out of the meat is dried. Add just sufficient water to cover meat. When meat is tender, add the remaining fat (melted) and remove from fire.
