Boondi raita

Batter:



Bengal gram flour
55gms
1.36kg
Chilli powder
1 tsp
75gms
Cumin powder
a pinch
15gms
Fat to fry (absorption)
30gms
750gms

Raita:



Curds
225gms
5.6kg
Crushed cumin or ground mustard
1 pinch
10gms
Coriander leaves
¼ bunch
1 bunch
Salt
to taste

Make a thick batter with flour, water and spices. Heat the fat. Pour batter into it through a perforated spoon to make bondis; fry till crisp. Remove and drain. Dip boondi in hot water and take out immediately. When cold, put into beaten curds to which cumin, salt and chopped coriander leaves have been added.
