Fish Roll

Ø  500  gms lemon sole (right-eyed flatfish)
Ø  4 tblsp lemon juice
Ø  8 tblsp bread crumbs
Ø  2 bunch of chopped coriander leaves or parsley
Ø  4 onions, finely chopped
Ø  1 tsp garam masala
Ø  2 tsps salt
Ø  4 green chillies
Ø  1 tsp chilli pwd
Ø  4 eggs
Ø  1 cup milk
Ø  Oil or ghee for frying

Wash and rid the fillets of bones if any, then sprinkle a little salt on them.

Prepare the stuffing:

Mix 6 tblsp of bread crumbs and milk together. Add a little of lemon juice, the remaining salt, garam masala, chopped onion, parsley and chillies. Add a little of beaten egg to it and mix thoroughly. To stuff the fish, place one of the washed and salted fillets on a board. Now sprinkle liberally lemon juice on it and coat the stuff with the beaten eggs. Try to stick the sides as best as you can. Roll it in the bread crumbs and shallow fry in hot fat until it is crisp and golden brown on both the sides. Drain and take it off from the flame. Stuff it with the stuffing material and fry the rest of the fillets like-wise. The dish taste superb with tomato or potato curry.
