Spinach soufflé (B)

Wash and boil spinach till tender and all moisture has evaporated. Make into a puree. Add egg yolks and grated cheese, reserving a little for sprinkle on top. Beat egg whites stiff, fold into the mixture. Put into a soufflé mould, sprinkle with remaining cheese and bake at 175oC (350oF) for 25-30 minutes.
