Pineapple soufflé

Breadcrumbs (fresh)
85gms
Castor sugar
100gms
Pineapple (small tin)
1 (about 400gms)


Cream butter and sugar and beat in egg yolks, breadcrumbs and pineapple pieces. Beat egg whites till stiff and fold half into the mixture. Pour into a greased pyrex dish. Pile remaining egg whites on top. Bake at 175oC (350oF) for 45 minutes in a hot water bath.
