Jamaican sweet potato pudding

Sweet potatoes
500gms
Butter
50gms
Sugar
75gms
Refined flour
25gms
Nutmeg
2
Ginger powder
a pinch
Coconut (grated)
100gms
Vanilla essence
a few drops
Raisins
10gms
Salt
a pinch


Wash, peel and grate sweet potatoes. Cream butter and sugar. Add grated sweet potatoes. Sift flour with nutmeg, ginger and salt. Add to the sweet potato mixture. Extract thick coconut milk from freshly grated coconut and add a little to the mixture. Add vanilla and raisins. Pour the mixture into a greased mould and bake at 190oC (375oF) for 1 ½ hours. Serve hot or cold with remaining coconut milk.
