Apple sauce:


Cooking apples

Lemon peel

Raisins (soaked in warm water)
¼ cup
Egg yolk (slightly beaten)

Prepare the sauce. Cut apples into eighths and cover with cold water. Add lemon peel and cook for 20-30 minutes or until apples are soft. Put the cooked apples through a strainer to remove peel and core. Add sugar and raisins. Whip egg yolk into the mixture to make it fluffy. Combine breadcrumbs and sugar. Saute in butter slowly until browned. Place alternate layers of breadcrumbs and apple sauce in a glass dish. Put thin layers of jam between layers. Serve chilled with whipped cream.
