Tomato omelette














Ingredients

Salt and pepper
to taste 
Fat
30gms
Tomatoes
225gms
Onions
30gms
Chopped parsley
a few springs


Blanch tomatoes. Cut into halves, removes seeds and chop roughly. Chop onions. Heat 15gms fat. Saute onions without discolouring. Add tomatoes. Simmer gently till all moisture is evaporated. Prepare omellete as for basic recipe. Fill with prepared tomato. Fold. Place on a hot plate, sprinkle chopped parsley on top and serve at once with tomato sauce (serve separately).

N. B.      A variety of fillings such as mushrooms, chicken liver, kidney, shrimp, ham, bacon, etc. can be used.
