Stuffed Doodhi















Ingredients

Bottle gourd (round)
1 (500gms)
Mawa
225gms
Almonds
60gms
Pistachio nuts
60gms
Rose essence
a few drops
Sugar
1 kg


Peel gourd. Cut off top part and scoop out seeds. Mix together part of the sugar, mawa and sliced nuts. Stuff the gourd. Put back the lid and tie down. To prevent stuffing from falling out. Make a thin syrup with remaining sugar and water. Cook the stuffed gourd in the sugar syrup till soft. Add rose essence. When cold lift out the gourd and place on a sliver plate. Decorate gourd with silver paper. Colour the rose syrup to a pale pink. Pour over the gourd.
