Peel pumpkin. Remove seeds and the stringy part, cut into
small cubes. Add just enough water to cook. Boil till tender. Press pumpkin
through a sieve. Return to pan with the butter, milk and stock. Season. Bring
to boil and serve hot, with fried croutons and garnished with parsley.
