Wash and cut meat into 5 cm.(2”) pieces. Crush well half the
onions, garlic and cumin. Grind red chillies fine. Mix with salt and curds. Rub
curds mixture well into the meat and leave for half an hour. Heat and fry
remaining onions sliced. Add meat. Cover the pan and shake well. Add lentil and
enough water to cover. Cook over medium heat. Put in crushed peppercorns and
turmeric. Mix well. Simmer till done and all the water is evaporated.
N. B. A proper do pyaz has no gravy save that of
the fat and spices.
