Miroton of mutton

Clean and roast leg of mutton, cool and carve into thin slices. Boil potatoes and mash. Prepare sauce with flour, butter, onions and stock. Chop mint parsley fine. Dredge meat with pepper, salt and chopped parsley and mint. Arrange slices of meat overlapping in a greased pyrex dish. Pipe a border of mashed potatoes all around. Pour the sauce mixed together over the meat. Sauce should be enough to cover the meat. Bake in a fairly quick oven and dust the top of the sauce with finely chopped mint before serving.
