Poories:


Refined flour

Water to mix

Salt
a pinch

Bhel:


Puffed rice
115gms
Fried split Bengal gram
115gms
Fried sev
115gms
Fried split green gram
115gms
Onions (chopped)
455gms
Coriander leaves
½ bunches

Chutney no.1:


Soak and grind together

Tamarind

Chutney no 2:


Grind all ingredients

Green chillies

Coriander leaves
¼ bunche
Mint leaves

Split Bengal gram (roasted)
30gms
Salt
to taste
Turmeric
a pinch

Chutney no. 3:


Grind to a smooth paste using water

Chilli powder
15gms
Coriander seeds
15gms
Garlic
30gms
Dry coconut
115gms
Peppercorns

Salt
to taste  


Make a stiff dough. Divide into small balls and roll into thin poories. Dry in the shade. Fry in deep fat till light brown.

Service:

Mix crushed poories, puffed rice, split Bengal gram, sev and fried green gram. Put about 30gms of the mixture in a plate. Add chopped onions, chutney, chopped mango and coriander.
