Wash and prepare the ladies fingers and keep aside. Wash and
cut meat into even sized pieces. Peel and slice onions and add to the meat.
Grind ginger and garlic. Add to meat with turmeric, salt, garam masala and oil.
Add a little water and keep pan on fire. Cook gently. When water dries up, add
chopped tomatoes. Stir constantly till tomatoes are well cooked. Add ladies
fingers. Brown for a little longer. Add enough water to cover the meat and
vegetables and cook gently until tender. Add lime juice or tamarind and allow
to boil well. Remove from fire and add finely chopped mint leaves. Serve hot.
