Clean spinach and wash well. Clean and slice garlic, ginger, green chillies, chop coriander leaves and cut brinjals. Put all prepared ingredients and chilli powder into a pan. Add salt and a little water and cook till vegetables are done and water evaporates. Heat the fat in a fry pan. Add powdered asafoetida, coriander and mashed spinach. Fry well, remove and serve hot.
