Sieve gram flour. Add a pinch each of salt, chilli powder,
oregano and a little fat. Make a hard dough using water. Then roll it out into
round long sticks. Boil in hot water for about 15 minutes. Remove and cut them
into short 1.25cm (or ½ “length) piece (gatta) with a knife. Fry lightly in hot
fat. Beat curds well with a little water, add turmeric, coriander powder and
salt. Heat a little fat in a pan, add cumin. When the cumin is browned add
chilli powder and beaten curds mixture and fried “gata”. Keep on stirring.
Remove when the gravy starts thickening. Serve hot.
