Bafat - "hurry Curry" Mix - Southwestern India












Ingredients

Coriander seeds
1/3 cup
Cumin seeds
¼ cup
Mustard seeds
2 tbsp
Whole black pepper corns
2 tbsp
Whole cloves
2 tbsp
Fenugreek seeds
1 tbsp
Ground cardamom
2 tbsp
Ground cinnamon
2 tbsp
Ground turmeric
2 tbsp
Freshly ground hot red chilli – such as cayenne
½ cup


Dry the whole spices in oven at 200F for 15 minutes, taking care not to burn them. Cool, and grind them together with the ground spices in a spice mill. Makes 2 cups.
