Hoppers (Quick method)














Ingredients
For 6

Rice flour
225gms
Refined flour 
225gms
Dry yeast
5gms
Warm water
1 tbsp
Sugar
1 heaped tbsp
Butter
1 heaped tbsp
Coconut milk (first extract)
200ml
Coconut milk (second extract)
400ml
Grated nutmeg
A pinch
Salt
2 tsp
 

Soak yeast in warm water. When yeast starts to work (it becomes frothy and bubbly), add sugar and melted butter. Add the coconut milk. Add the mixture gradually to the flour adding more coconut milk, if necessary to make it suitable batter for hoppers. Add grated nutmeg. Set aside for 1 to 2 hours. Add salt just before making the hoppers. Do not stir too much.
