Ø 4 cups of rice
Ø 4 cups of mutton, cut into small pieces
Ø 6 cloves
Ø 1 tsp poppy seeds, roasted and coarsely powdered
Ø 1” long cinnamon stick
Ø 4 onions chopped
Ø 6 cloves garlic chopped
Ø 6 green chillies, sliced
Ø 1” piece ginger chopped
Ø 1 tsp cumin seeds, roasted and powdered
Ø 1 tsp coriander pwd
Ø 3 small cardamoms
Ø 1 lemon juice & few fresh mint leaves
Ø 2 cups of fresh curd or 3 tblsp vinegar
Ø 8 tblsps ghee
Heat ghee and fry sliced onions, chopped garlic till brown. Add rice and stir well. Add 4 cups of hot water. Throw in peeled cardamoms. Cover and cook on medium flame. Now heat rest of the ghee, fry mutton. Add cloves, poppy seeds, cinnamon, green chillies, cumin seeds, coriander powder, mint leaves, salt and beaten curd. Cook for few minutes, then add lemon juice and allow it to simmer. When almost a thick gravy, take it off the flame.
Now mix the cooked mutton into the half boiled rice. Put this whole mixture into an oven and cook on low heat till rice is fully done. Serve hot with curry.
