Bhatura













Ø  2 cups plain flour (maida)
Ø  ¾ cup semolina (suji)
Ø  ½ tsp baking soda
Ø  ½ tsp salt
Ø  1 tsp sugar
Ø  ½ cup yogurt (approx)
Ø  Oil for deep frying

Soak semolina for 15 minutes in water, which is just enough to cover it.

Sift salt, baking soda and flour. Add sugar, semolina and yogurt to the sifted flour( sieved). Knead with some warm water to make a smooth dough of rolling consistency. Brush the dough with oil. Keep covered in warm place for 3-4 hours.

At serving time, make 8-10 balls. Roll each ball to an oblong shape. Pull from one side to get a pointed tip.

Heat oil. Deep fry bhatura in medium hot oil. Remove from oil before they turn brown. Serve with Chole.
