Ø 1 cup lard (250 ml)
Ø 1 cup castor sugar (220 gms)
Ø 1 egg, beaten
Ø 2 tblsps ground almonds
Ø 2 tblsp ground cashew nuts
Ø ½ tsp vanilla
Ø ½ tsp almond essence
Ø 2 ½ cups plain flour (310 gms)
Ø 1 ½ level tsps baking pwd
Ø Pinch salt
Cream lard and sugar together in a bowl. Add egg, almonds, cashews, vanilla and almond essence.
Sift flour, baking powder and salt together. Fold in to creamed mixture and knead lightly. Shape dough into walnutsized balls. Arrange on lightly greased trays. Press each ball to flatten slightly with a fork.
Bake at 200oC (400oC) until pale golden, 15 – 20 minutes.
