Heat the fat. Fry washed rice lightly. Add double the
quantity of water and cook till tender and dry (the rice grains should be
separate). Add half the beaten egg. Cook lentils till tender. Slice onions and
fry well in the oil. Mix together lentils, fried onions and remaining beaten
egg. Add flaked cheese, chopped parsley and seasoning. Put half the rice
mixture in a well-greased pie dish. Add the lentil mixture. Cover with
remaining rice. Cook at 190oC (375oF) or gas mark 5 for
half an hour. Serve hot with cooked greens.
