Stuffed Vegetables shak















Ingredients

Brinjals (small round variety)
500gms
Sweet potatoes
250gms
Yam (zaminkhand, purple variety)
250gms

The stuffing:


Fresh coconut
½
Coriander leaves
½ bunch
Gram flour
2 tsp
Coriander – cumin powder
2 tsp
Slat
to Taste
Ginger
2.5 cm. (1”) piece
Green chillies
6 – 8
Turmeric
½ tsp
Asafoetida
a pinch
Oil
1 cup


Grind the coconut. Chop the coriander leaves, ginger and green chillies. Mix all the spices and coconut together with salt. Add 2 tbsp oil and mix well. Peel potatoes, sweet potatoes and yam. Slit vegetables into four. Stuff with prepared masala. Bind together. Heat ¾ cup oil in a pan. Add the vegetables. Stir well. Cook over extremely slow fire for 1 ½ hours, keeping a little water on the lid of the pan to prevent burning. The vegetables and spices should be well cooked. Test for salt and remove.
