Wash and steam gourd, whole or cut into half, until half cooked. Cut into 5 cm (2”) pieces. Remove seeds. Apply salt and set aside. Boil potatoes. Peel and dice. Chop onions, green chillies and ginger. Heat a little oil. Add mustard seeds; when they crackle, add chillies, onion, ginger, turmeric, potatoes and salt. Mix well. Add lime juice. Mix again and remove. Stuff the gourd with potato stuffing. Prepare a batter with gram flour, salt and water. Dip gourd in batter and deep fry in hot oil.
