Wash the gourd. Cut into 3.5cm (1 ½”) pieces. Cut into half remove seeds and white pith. Slice into fingers about 0.25 – 0.5 cm ( 1/8” – ¼” ) thick. Crush red chillies. Mix gourd pieces, chillies and salt and barely cover with water. Cook till gourd is tender and no moisture remains. Heat the oil. Fry cooked gourd.

N. B.      Raw  bananas, kurkas, chauli beans etc., can be prepared in the same manner.
