Wash the gourd. Cut into 3.5cm (1
½”) pieces. Cut into half remove seeds and white pith. Slice into fingers about
0.25 – 0.5 cm ( 1/8” – ¼” ) thick. Crush red chillies. Mix gourd pieces,
chillies and salt and barely cover with water. Cook till gourd is tender and no
moisture remains. Heat the oil. Fry cooked gourd.
