Fried Karela or avakka ulathiyathu

Bitter gourd

Coconut (fresh)

Wash and dry the gourd. Slit and remove seeds and pulp. Cut into fine slices or roundels. Slit green chillies. Cut coconut into 0.75 cm ( ¼ “) pieces. Cook together gourd, green chillies and coconut with salt and just enough water to cook gourd dry. Cook over gentle heat till gourd is done and water evaporated. Heat the oil in a fry pan. Add cooked gourd and fry till gourd is fairly crisp.
