Peel and cut potatoes into quarters. Heat fat and fry potatoes. Remove. Grind together chilli powder, garlic and ginger. Fry masala and whole green chillies. Add washed and chopped spinach and fenugreek leaves. Saute. Add potatoes and salt and cook covered on a slow fire till potatoes are tender and the leaves are mashed up. Garnish with coriander leaves.
